Poached chicken mozzarella basil flatbreads

8 wholemeal trtilla wraps
1 x Jar of Stefano’s Preserves Eggplant Pickle
2 balls of Balls of mozzarella, torn into pieces
2 Very ripe summer tomatoes, thinly sliced
2 Chicken Breasts, poached then shredded
1 handful of basil leaves torn
Spread the base of the tortilla with a generous amount of the eggplant pickle then top with a quarter of the mozzarella, tomato slices, shredded chicken and basil leaves and the fold over (in half) the tortillas.
Repeat with the remaining tortillas. Heat a tablespoon of the olive oil in a medium-sized, heavy-based saucepan and fry the tortillas for a couple of minutes on each side, turning carefully to keep all the filling inside.
Serve with a green salad.
